Ingredients

  • Pumpkin (cubed) - 200 grams
  • Coconut cream - 100 grams
  • Almond flour - 30 grams
  • Erythritol - 30 grams
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 100 milliliters

Steps

  1. Prepare the pumpkin by peeling and cubing it into small pieces.
  2. Steam the pumpkin cubes over boiling water for about 15 minutes, or until soft.
  3. In a mixing bowl, combine the steamed pumpkin, coconut cream, erythritol, salt, and vanilla extract. Mash until smooth.
  4. Add the almond flour and baking powder to the mixture, and stir until well combined.
  5. Grease two small ramekins and evenly distribute the mixture into them.
  6. Place the ramekins in a steamer and steam for an additional 10 minutes.
  7. Remove from the steamer and let cool slightly before serving.
