Ingredients
- Sticky rice - 100 grams
- Coconut milk - 150 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Mango - 1 medium, ripe
- Tapioca flour - 1 tablespoon
- Pandan leaf (optional) - 1 piece
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- After soaking, drain the rice and steam it in a bamboo steamer or a heatproof dish lined with cheesecloth for 25-30 minutes until tender.
- In a saucepan, combine the coconut milk, sugar, and salt. Heat over low-medium heat until the sugar dissolves, but do not boil.
- Take 100 ml of the coconut mixture and mix it with the tapioca flour until smooth, then return it to the saucepan and cook for another 5 minutes until slightly thickened.
- Slice the ripe mango into thin strips and set aside.
- Once the rice is cooked, remove it from the steamer and mix it with the remaining coconut milk mixture, allowing it to sit for 10 minutes to absorb the flavors.
- To serve, layer the sticky rice on a plate, pour the thickened coconut sauce over it, and arrange the mango slices on top.
- Optionally, garnish with a pandan leaf for added aroma and presentation.
