Ingredients

  • Sticky rice - 100 grams
  • Coconut milk - 150 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Mango - 1 medium, ripe
  • Tapioca flour - 1 tablespoon
  • Pandan leaf (optional) - 1 piece

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and steam it in a bamboo steamer or a heatproof dish lined with cheesecloth for 25-30 minutes until tender.
  3. In a saucepan, combine the coconut milk, sugar, and salt. Heat over low-medium heat until the sugar dissolves, but do not boil.
  4. Take 100 ml of the coconut mixture and mix it with the tapioca flour until smooth, then return it to the saucepan and cook for another 5 minutes until slightly thickened.
  5. Slice the ripe mango into thin strips and set aside.
  6. Once the rice is cooked, remove it from the steamer and mix it with the remaining coconut milk mixture, allowing it to sit for 10 minutes to absorb the flavors.
  7. To serve, layer the sticky rice on a plate, pour the thickened coconut sauce over it, and arrange the mango slices on top.
  8. Optionally, garnish with a pandan leaf for added aroma and presentation.
