Ingredients
- Rice flour - 60 grams
- Coconut milk - 200 ml
- Water - 100 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Fresh crab meat - 100 grams
- Spring onions - 2 tablespoons, finely chopped
- Cilantro - 1 tablespoon, chopped
- Black sesame seeds - 1 teaspoon (optional) for garnish
Steps
- In a mixing bowl, combine the rice flour, coconut milk, water, sugar, and salt. Whisk until smooth and let the batter rest for about 10 minutes.
- In another bowl, mix the crab meat, chopped spring onions, cilantro, and a pinch of salt. Set aside.
- Preheat a Khanom Krok pan or a non-stick mini pancake pan over medium heat. Lightly grease the molds with oil.
- Pour a tablespoon of the batter into each mold, filling them halfway. Cover and cook for about 3-4 minutes until the batter starts to set.
- Add a teaspoon of the crab mixture on top of the batter in each mold. Pour a little more batter over the crab filling to cover it completely.
- Cover the pan again and cook for another 5-7 minutes until the tops are firm and slightly golden.
- Remove the Khanom Krok Poo from the pan using a spoon. Serve hot, garnished with black sesame seeds if desired.
