Ingredients

  • Rice flour - 60 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Fresh crab meat - 100 grams
  • Spring onions - 2 tablespoons, finely chopped
  • Cilantro - 1 tablespoon, chopped
  • Black sesame seeds - 1 teaspoon (optional) for garnish

Steps

  1. In a mixing bowl, combine the rice flour, coconut milk, water, sugar, and salt. Whisk until smooth and let the batter rest for about 10 minutes.
  2. In another bowl, mix the crab meat, chopped spring onions, cilantro, and a pinch of salt. Set aside.
  3. Preheat a Khanom Krok pan or a non-stick mini pancake pan over medium heat. Lightly grease the molds with oil.
  4. Pour a tablespoon of the batter into each mold, filling them halfway. Cover and cook for about 3-4 minutes until the batter starts to set.
  5. Add a teaspoon of the crab mixture on top of the batter in each mold. Pour a little more batter over the crab filling to cover it completely.
  6. Cover the pan again and cook for another 5-7 minutes until the tops are firm and slightly golden.
  7. Remove the Khanom Krok Poo from the pan using a spoon. Serve hot, garnished with black sesame seeds if desired.
