Ingredients

  • Ripe bananas - 200 grams (about 2 medium bananas)
  • Coconut milk - 150 ml
  • Rice flour - 50 grams
  • Tapioca flour - 30 grams
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Water - 100 ml
  • Banana leaves - for lining (optional)

Steps

  1. Peel the ripe bananas and mash them in a mixing bowl until smooth.
  2. In another bowl, combine the rice flour, tapioca flour, sugar, and salt. Mix well.
  3. Add the mashed bananas, coconut milk, and water to the dry ingredients. Stir until you have a smooth batter.
  4. If using banana leaves, cut them into small squares and line small steaming cups or ramekins.
  5. Pour the batter into the lined cups, filling them about 3/4 full.
  6. Prepare a steamer by boiling water in a pot. Place the cups in the steamer basket, cover, and steam for about 25-30 minutes or until the pudding is set.
  7. Once done, remove from the steamer and let them cool slightly before serving.
