Ingredients

  • Glutinous rice - 100 grams

  • Eggs - 2 large
  • Pandan leaves - 2 (for flavoring, optional)

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight. Drain the rice before cooking.
  2. Steam the drained rice in a bamboo or metal steamer for about 25-30 minutes until fully cooked and sticky.
  3. In a mixing bowl, whisk together the coconut milk, sugar, salt, and eggs until well combined. If desired, blend in the pandan leaves for flavor.
  4. Once the rice is cooked, transfer it to a serving dish and flatten it evenly.
  5. Pour the coconut custard mixture over the sticky rice, spreading it evenly.
  6. Return the dish to the steamer and steam for an additional 15-20 minutes until the custard is set.
  7. Allow to cool slightly before cutting into squares or wedges. Serve warm or at room temperature.
