Steps
- Soak the glutinous rice in water for at least 4 hours or overnight. Drain the rice before cooking.
- Steam the drained rice in a bamboo or metal steamer for about 25-30 minutes until fully cooked and sticky.
- In a mixing bowl, whisk together the coconut milk, sugar, salt, and eggs until well combined. If desired, blend in the pandan leaves for flavor.
- Once the rice is cooked, transfer it to a serving dish and flatten it evenly.
- Pour the coconut custard mixture over the sticky rice, spreading it evenly.
- Return the dish to the steamer and steam for an additional 15-20 minutes until the custard is set.
- Allow to cool slightly before cutting into squares or wedges. Serve warm or at room temperature.
