Ingredients
- Glutinous rice - 100 grams
- Coconut milk - 200 ml
- Sugar - 80 grams
- Salt - 1/4 teaspoon
- Eggs - 2 large
- Pandan leaves - 2 (for flavor, optional)
- Water - 200 ml (for steaming)
Steps
- Rinse the glutinous rice under cold water until the water runs clear. Soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 30 minutes until fully cooked and sticky.
- In a bowl, whisk together the coconut milk, sugar, salt, and eggs until smooth. If using pandan leaves, blend them with the coconut milk and strain to infuse the flavor.
- Prepare small cups or a shallow dish for the custard. Pour a thin layer of the coconut mixture over the bottom of the cups, reserving some for the final layer.
- Place the cups in a steamer and steam for about 10 minutes until the first layer sets.
- Remove the cups from the steamer and add a layer of the cooked sticky rice on top of the coconut custard, pressing it down gently.
- Finally, pour the remaining coconut mixture over the rice layer and return the cups to the steamer. Steam for another 15-20 minutes until the custard is fully set.
- Let the dessert cool for a few minutes before serving. Optionally, garnish with fresh mango or a sprinkle of toasted sesame seeds.
