- Glutinous rice - 100g
- Coconut milk - 200ml
- Sugar - 50g
- Salt - 1/4 tsp
- Tapioca starch - 1 tbsp
- Water - 100ml
- Sesame seeds - 1 tbsp (for garnish)
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight.
- Drain the rice and steam it for about 30 minutes until fully cooked and sticky.
- In a saucepan, combine coconut milk, sugar, and salt. Heat gently until the sugar dissolves, then reserve 1/4 cup of this mixture for topping.
- Mix the cooked sticky rice with the remaining coconut milk mixture until well combined.
- In a small bowl, mix tapioca starch with 100ml of water until smooth, then add it to the reserved coconut milk mixture. Cook over low heat until it thickens slightly.
- In small serving bowls or molds, layer the sticky rice first, pressing it down gently, followed by a layer of the thickened coconut milk mixture.
- Steam the layered dessert for an additional 10 minutes to set.
- Once done, let it cool slightly before garnishing with sesame seeds and serving.
