Ingredients

  • Glutinous rice - 100 grams
  • Coconut milk - 200 ml
  • Sugar - 80 grams
  • Salt - 1/4 teaspoon
  • Eggs - 2 large
  • Pandan leaves - 2 (optional, for flavor)
  • Vanilla extract - 1 teaspoon
  • Rice flour - 30 grams

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer lined with cheesecloth for about 25 minutes until cooked and sticky.
  3. In a saucepan, combine the coconut milk, sugar, and salt over medium heat, stirring until the sugar is dissolved. Remove from heat.
  4. In a bowl, whisk together the eggs, rice flour, vanilla extract, and half of the sweetened coconut milk mixture until smooth.
  5. Grease a small baking dish and pour the remaining coconut milk mixture over the cooked sticky rice, then spread it evenly.
  6. Pour the egg mixture over the rice layer, using a spatula to smooth the top.
  7. Steam the layered dessert for about 20-25 minutes until the custard is set and firm.
  8. Let it cool slightly before cutting into squares and serving. Optionally, garnish with fresh pandan leaves.
