- Glutinous rice - 100 grams
- Coconut milk - 200 ml
- Sugar - 80 grams
- Salt - 1/4 teaspoon
- Eggs - 2 large
- Pandan leaves - 2 (optional, for flavor)
- Vanilla extract - 1 teaspoon
- Rice flour - 30 grams
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo steamer lined with cheesecloth for about 25 minutes until cooked and sticky.
- In a saucepan, combine the coconut milk, sugar, and salt over medium heat, stirring until the sugar is dissolved. Remove from heat.
- In a bowl, whisk together the eggs, rice flour, vanilla extract, and half of the sweetened coconut milk mixture until smooth.
- Grease a small baking dish and pour the remaining coconut milk mixture over the cooked sticky rice, then spread it evenly.
- Pour the egg mixture over the rice layer, using a spatula to smooth the top.
- Steam the layered dessert for about 20-25 minutes until the custard is set and firm.
- Let it cool slightly before cutting into squares and serving. Optionally, garnish with fresh pandan leaves.
