- Sticky rice - 100 grams
- Coconut milk - 150 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Pandan leaves - 2 pieces (optional for flavor)
- Rice flour - 40 grams
- Water - 100 ml
- Grated coconut (fresh or desiccated) - 30 grams
Steps
- Soak the sticky rice in water for at least 4 hours or overnight.
- Drain the sticky rice and steam it in a steamer basket lined with cheesecloth for about 20-25 minutes until cooked and tender.
- In a saucepan, combine the coconut milk, sugar, and salt. Heat over low heat until the sugar dissolves, stirring continuously. Set aside half of this mixture for later use.
- In a mixing bowl, combine the rice flour and water to create a smooth batter.
- Once the sticky rice is cooked, mix it with the remaining coconut mixture until well combined.
- In a greased mold or small bowls, layer the sticky rice mixture and then pour the rice flour batter on top. Optionally, add pandan leaves for flavor.
- Steam the molds for about 15-20 minutes until the rice flour layer is set and cooked through.
- Allow to cool slightly before serving. Top with grated coconut for garnish.
