- Water - 100 milliliters

- Salt - 1/4 teaspoon
- Eggs - 2 large
- Pandan leaf extract - 1 teaspoon (for coloring, optional)
- Grated coconut - 50 grams (for topping)
- Sesame seeds - 1 tablespoon (for topping, optional)
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, sugar, and salt.
- Add the coconut milk and water to the dry ingredients, mixing until smooth.
- In another bowl, whisk the eggs until frothy, then add them to the batter, mixing well.
- If using, add the pandan leaf extract for color and mix until evenly distributed.
- Heat a non-stick skillet or frying pan over medium heat and lightly grease it with oil.
- Pour a ladleful of the batter into the skillet, spreading it evenly to form a thin pancake.
- Cook for about 2-3 minutes until the edges turn golden brown, then sprinkle some grated coconut on top.
- Cover the pancake with a lid and cook for another 2-3 minutes until the coconut is set.
- Remove the pancake and repeat with the remaining batter.
- Serve warm, optionally garnished with sesame seeds.
