Ingredients

  • Coconut rice noodles - 200 grams
  • Coconut oil - 2 tablespoons
  • Red bell pepper - 1, thinly sliced
  • Zucchini - 1 medium, spiralized or thinly sliced
  • Mushrooms - 100 grams, sliced
  • Fresh basil leaves - 1/4 cup, chopped
  • Thai red curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Cook the coconut rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat coconut oil over medium heat and sauté the sliced red bell pepper, zucchini, and mushrooms for about 5-7 minutes until tender.
  3. Add the Thai red curry paste to the skillet and stir well to combine with the vegetables.
  4. Pour in the coconut milk and lime juice, stirring until well mixed. Season with salt and black pepper to taste.
  5. Preheat your oven to 200°C (400°F).
  6. On a baking sheet lined with parchment paper, spread the cooked coconut rice noodles into a circular shape to form a pizza crust.
  7. Bake the noodle crust in the preheated oven for 10 minutes until slightly crispy.
  8. Remove the crust from the oven and evenly distribute the vegetable mixture on top.
  9. Add halved cherry tomatoes and chopped basil leaves as toppings.
  10. Return the pizza to the oven and bake for an additional 10-15 minutes until everything is heated through and the edges of the crust are golden.
  11. Remove from the oven, let cool for a few minutes, slice, and serve warm.
