- Zucchini - 1 medium, spiralized or thinly sliced
- Mushrooms - 100 grams, sliced
- Fresh basil leaves - 1/4 cup, chopped
- Thai red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
Steps
- Cook the coconut rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat coconut oil over medium heat and sauté the sliced red bell pepper, zucchini, and mushrooms for about 5-7 minutes until tender.
- Add the Thai red curry paste to the skillet and stir well to combine with the vegetables.
- Pour in the coconut milk and lime juice, stirring until well mixed. Season with salt and black pepper to taste.
- Preheat your oven to 200°C (400°F).
- On a baking sheet lined with parchment paper, spread the cooked coconut rice noodles into a circular shape to form a pizza crust.
- Bake the noodle crust in the preheated oven for 10 minutes until slightly crispy.
- Remove the crust from the oven and evenly distribute the vegetable mixture on top.
- Add halved cherry tomatoes and chopped basil leaves as toppings.
- Return the pizza to the oven and bake for an additional 10-15 minutes until everything is heated through and the edges of the crust are golden.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
