- Rice noodles - 200 grams
- Beef (chuck or brisket) - 150 grams, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Shallots - 2, finely chopped
- Garlic - 3 cloves, minced
- Red curry paste - 2 tablespoons
- Fish sauce - 2 tablespoons
- Tamarind paste - 1 tablespoon
- Sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Water - 500 milliliters
- Fresh cilantro - for garnish
- Chili flakes - to taste
- Salt - to taste
Steps
- Cook the rice noodles according to the package instructions, then drain and set aside.
- In a pot, heat a little oil over medium heat and sauté the shallots and garlic until fragrant.
- Add the beef slices and cook until browned, around 5-7 minutes.
- Stir in the red curry paste, cooking for another 2 minutes until well combined.
- Add the cherry tomatoes, fish sauce, tamarind paste, sugar, and water to the pot. Bring to a simmer.
- Let the broth simmer for 15-20 minutes, allowing the flavors to meld and the beef to become tender.
- Adjust seasoning with salt, lime juice, and chili flakes to taste.
- To serve, place a portion of rice noodles in a bowl and ladle the hot beef broth over the noodles.
- Garnish with fresh cilantro and additional chili flakes if desired.
