Ingredients

  • Rice noodles - 200 grams
  • Beef (chuck or brisket) - 150 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Shallots - 2, finely chopped
  • Garlic - 3 cloves, minced
  • Red curry paste - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Tamarind paste - 1 tablespoon
  • Sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Water - 500 milliliters
  • Fresh cilantro - for garnish
  • Chili flakes - to taste
  • Salt - to taste

Steps

  1. Cook the rice noodles according to the package instructions, then drain and set aside.
  2. In a pot, heat a little oil over medium heat and sauté the shallots and garlic until fragrant.
  3. Add the beef slices and cook until browned, around 5-7 minutes.
  4. Stir in the red curry paste, cooking for another 2 minutes until well combined.
  5. Add the cherry tomatoes, fish sauce, tamarind paste, sugar, and water to the pot. Bring to a simmer.
  6. Let the broth simmer for 15-20 minutes, allowing the flavors to meld and the beef to become tender.
  7. Adjust seasoning with salt, lime juice, and chili flakes to taste.
  8. To serve, place a portion of rice noodles in a bowl and ladle the hot beef broth over the noodles.
  9. Garnish with fresh cilantro and additional chili flakes if desired.
