- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons (for frying)
- Lettuce leaves - 4 large (for wrapping)
- Cucumber - 1, sliced (for topping)
- Tomato - 1, sliced (for topping)
- Avocado - 1, sliced (for topping)
Steps
- In a large bowl, combine the grated zucchini, grated cauliflower, minced garlic, chopped green onion, chopped cilantro, chopped red chili (if using), salt, and black pepper.
- Add the egg and almond flour to the mixture, stirring until well combined to form a thick batter.
- Heat 1 tablespoon of coconut oil in a skillet over medium heat. Once hot, scoop about 1/4 cup of the mixture into the skillet, flattening it into a patty shape. Cook for 3-4 minutes on each side until golden brown. Repeat for the remaining mixture, adding more coconut oil as needed.
- While the patties are cooking, prepare your toppings: slice the cucumber, tomato, and avocado.
- To assemble, take a large lettuce leaf and place a patty in the center. Top with cucumber, tomato, and avocado slices. Wrap the lettuce around the filling and serve immediately.
