  • Red chili - 1, finely chopped (optional)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)
  • Lettuce leaves - 4 large (for wrapping)
  • Cucumber - 1, sliced (for topping)
  • Tomato - 1, sliced (for topping)
  • Avocado - 1, sliced (for topping)

Steps

  1. In a large bowl, combine the grated zucchini, grated cauliflower, minced garlic, chopped green onion, chopped cilantro, chopped red chili (if using), salt, and black pepper.
  2. Add the egg and almond flour to the mixture, stirring until well combined to form a thick batter.
  3. Heat 1 tablespoon of coconut oil in a skillet over medium heat. Once hot, scoop about 1/4 cup of the mixture into the skillet, flattening it into a patty shape. Cook for 3-4 minutes on each side until golden brown. Repeat for the remaining mixture, adding more coconut oil as needed.
  4. While the patties are cooking, prepare your toppings: slice the cucumber, tomato, and avocado.
  5. To assemble, take a large lettuce leaf and place a patty in the center. Top with cucumber, tomato, and avocado slices. Wrap the lettuce around the filling and serve immediately.
