- Coconut milk - 200 ml
- Red curry paste - 2 tablespoons
- Vegetable broth - 200 ml
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Bean sprouts - 50 grams
- Cucumber - 1 small, sliced
- Carrot - 1 small, julienned
- Fresh cilantro - 10 grams, chopped
- Thai basil - 10 grams, chopped
- Chili flakes - to taste
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a saucepan, combine coconut milk, red curry paste, vegetable broth, salt, and sugar. Heat over medium heat until it simmers.
- Once simmering, reduce heat to low and stir in lime juice. Allow to cook for an additional 5 minutes.
- On serving plates, place a serving of rice noodles. Ladle the curry sauce over the noodles.
- Top with fresh bean sprouts, cucumber slices, and julienned carrots.
- Garnish with chopped cilantro, Thai basil, and sprinkle with chili flakes to taste.
