Ingredients

  • Rice noodles - 200 grams
  • Coconut milk - 200 ml
  • Red curry paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Bean sprouts - 50 grams
  • Cucumber - 1 small, sliced
  • Carrot - 1 small, julienned
  • Fresh cilantro - 10 grams, chopped
  • Thai basil - 10 grams, chopped
  • Chili flakes - to taste

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a saucepan, combine coconut milk, red curry paste, vegetable broth, salt, and sugar. Heat over medium heat until it simmers.
  3. Once simmering, reduce heat to low and stir in lime juice. Allow to cook for an additional 5 minutes.
  4. On serving plates, place a serving of rice noodles. Ladle the curry sauce over the noodles.
  5. Top with fresh bean sprouts, cucumber slices, and julienned carrots.
  6. Garnish with chopped cilantro, Thai basil, and sprinkle with chili flakes to taste.
