Ingredients

  • Rice flour - 100 grams
  • Tapioca flour - 30 grams
  • Water - 150 ml
  • Tofu (firm) - 100 grams, crumbled
  • Shiitake mushrooms - 50 grams, finely chopped
  • Carrot - 30 grams, finely grated
  • Garlic - 1 clove, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped green onions - 2 tablespoons
  • Cilantro - 1 tablespoon, chopped

Steps

  1. In a mixing bowl, combine the rice flour, tapioca flour, and water to form a smooth dough. Cover and let it rest for 15 minutes.
  2. In another bowl, mix the crumbled tofu, chopped shiitake mushrooms, grated carrot, minced garlic, soy sauce, sesame oil, black pepper, green onions, and cilantro until well combined.
  3. Divide the dough into small balls (about 20 grams each) and flatten each ball into a small circle about 5 cm in diameter.
  4. Place a tablespoon of the filling in the center of each dough circle, then fold the edges up and pinch to seal the dumpling.
  5. Prepare a steamer and line it with parchment paper. Place the dumplings in the steamer, leaving space between them.
  6. Steam the dumplings over boiling water for about 15-20 minutes, or until the dough becomes translucent.
  7. Serve hot with soy sauce or your favorite dipping sauce.
