Ingredients
- Rice flour - 100 grams
- Tapioca starch - 50 grams
- Coconut milk - 200 ml
- Pandan juice - 100 ml (from fresh pandan leaves)
- Sugar - 80 grams
- Salt - 1/4 teaspoon
- Water - 200 ml
Steps
- Prepare the pandan juice by blending fresh pandan leaves with 100 ml of water, then strain to extract the juice.
- In a bowl, mix the rice flour, tapioca starch, sugar, and salt until well combined.
- In a separate bowl, combine the coconut milk and pandan juice, then gradually add this mixture to the dry ingredients, stirring continuously to avoid lumps.
- Divide the batter into two bowls. Leave one bowl as is for the white layer and add a few drops of green food coloring to the other bowl for the pandan layer.
- Grease a 20 cm square pan and pour 1/4 of the white batter into the pan. Steam over boiling water for 10 minutes until set.
- Add 1/4 of the green batter over the white layer and steam for another 10 minutes until set.
- Repeat the layering process, alternating between white and green batter until all the batter is used, steaming each layer for 10 minutes.
- Once all layers are cooked, let the Khanom Chan cool completely before cutting into squares.
- Serve at room temperature or chilled, and enjoy!
