Khanom Chan

Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Coconut milk - 200 ml
  • Pandan juice - 100 ml (from fresh pandan leaves)
  • Sugar - 80 grams
  • Salt - 1/4 teaspoon
  • Water - 200 ml

Steps

  1. Prepare the pandan juice by blending fresh pandan leaves with 100 ml of water, then strain to extract the juice.
  2. In a bowl, mix the rice flour, tapioca starch, sugar, and salt until well combined.
  3. In a separate bowl, combine the coconut milk and pandan juice, then gradually add this mixture to the dry ingredients, stirring continuously to avoid lumps.
  4. Divide the batter into two bowls. Leave one bowl as is for the white layer and add a few drops of green food coloring to the other bowl for the pandan layer.
  5. Grease a 20 cm square pan and pour 1/4 of the white batter into the pan. Steam over boiling water for 10 minutes until set.
  6. Add 1/4 of the green batter over the white layer and steam for another 10 minutes until set.
  7. Repeat the layering process, alternating between white and green batter until all the batter is used, steaming each layer for 10 minutes.
  8. Once all layers are cooked, let the Khanom Chan cool completely before cutting into squares.
  9. Serve at room temperature or chilled, and enjoy!
