- Chicken breast - 200 grams, sliced
- Coconut oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, sliced
- Lemongrass - 1 stalk, smashed and cut into 2-inch pieces
- Kaffir lime leaves - 3, torn
- Thai bird's eye chili - 2, smashed (adjust for spice level)
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Fish sauce - 3 tablespoons
- Lime juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped (for garnish)
- Chicken broth - 500 ml
- Zucchini - 1 medium, spiralized (or julienned)
- Salt - to taste
Steps
- In a pot, heat the coconut oil over medium heat. Add the minced garlic and sliced shallots, sauté until fragrant and translucent.
- Add the sliced chicken breast to the pot, cooking until it is no longer pink.
- Pour in the chicken broth, then add the lemongrass, kaffir lime leaves, and bird's eye chili. Bring the mixture to a boil.
- Reduce the heat to a simmer and add the mushrooms and spiralized zucchini. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the fish sauce and lime juice. Season with salt to taste.
- Remove from heat, discard the lemongrass and lime leaves, and serve hot, garnished with chopped cilantro.
