Ingredients

  • Chicken breast - 200 grams, sliced
  • Coconut oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Lemongrass - 1 stalk, smashed and cut into 2-inch pieces
  • Kaffir lime leaves - 3, torn
  • Thai bird's eye chili - 2, smashed (adjust for spice level)
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Fish sauce - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped (for garnish)
  • Chicken broth - 500 ml
  • Zucchini - 1 medium, spiralized (or julienned)
  • Salt - to taste

Steps

  1. In a pot, heat the coconut oil over medium heat. Add the minced garlic and sliced shallots, sauté until fragrant and translucent.
  2. Add the sliced chicken breast to the pot, cooking until it is no longer pink.
  3. Pour in the chicken broth, then add the lemongrass, kaffir lime leaves, and bird's eye chili. Bring the mixture to a boil.
  4. Reduce the heat to a simmer and add the mushrooms and spiralized zucchini. Cook for about 5-7 minutes until the vegetables are tender.
  5. Stir in the fish sauce and lime juice. Season with salt to taste.
  6. Remove from heat, discard the lemongrass and lime leaves, and serve hot, garnished with chopped cilantro.
