Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Tom Yum paste - 3 tablespoons
  • Coconut milk - 100 ml
  • Shrimp (peeled and deveined) - 150 grams
  • Red bell pepper (sliced) - 1/2 medium
  • Mushrooms (sliced) - 100 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, and baking powder. Mix until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a pizza base about 1 cm thick.
  4. Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
  5. In a separate pan, heat coconut milk over medium heat and stir in the Tom Yum paste. Add shrimp, red bell pepper, and mushrooms, cooking until shrimp is pink and vegetables are tender, about 5-7 minutes.
  6. Remove the pizza base from the oven and spread the Tom Yum shrimp mixture evenly over it.
  7. Return the pizza to the oven and bake for an additional 5-7 minutes until everything is heated through.
  8. Remove from oven, drizzle with lime juice, sprinkle with fresh cilantro and chili flakes, then slice and serve.
