Ingredients

  • Zucchini - 2 medium (about 400g)
  • Shrimp, peeled and deveined - 200g
  • Coconut oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallot, finely chopped - 1 small
  • Thai bird's eye chilies, sliced - 2 (adjust to taste)
  • Lemongrass, minced - 1 stalk
  • Kaffir lime leaves - 3, torn
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Mushrooms, sliced - 100g
  • Chicken or vegetable broth - 500ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles and set aside.
  2. In a large pot, heat coconut oil over medium heat. Add minced garlic, chopped shallot, and sliced chilies, and sauté until fragrant, about 2-3 minutes.
  3. Add the minced lemongrass and torn kaffir lime leaves to the pot, cooking for another minute.
  4. Pour in the chicken or vegetable broth and bring to a simmer.
  5. Add sliced mushrooms and shrimp to the pot, cooking for about 5-7 minutes until the shrimp are pink and cooked through.
  6. Stir in the fish sauce and lime juice, then season with salt and black pepper to taste.
  7. Finally, add the zoodles to the pot and cook for an additional 2-3 minutes until just tender.
  8. Remove from heat, stir in chopped cilantro, and serve hot.
