- Zucchini - 2 medium (about 400g)
- Shrimp, peeled and deveined - 200g
- Coconut oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallot, finely chopped - 1 small
- Thai bird's eye chilies, sliced - 2 (adjust to taste)
- Lemongrass, minced - 1 stalk
- Kaffir lime leaves - 3, torn
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cilantro, chopped - 2 tablespoons
- Mushrooms, sliced - 100g
- Chicken or vegetable broth - 500ml
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer to create zoodles and set aside.
- In a large pot, heat coconut oil over medium heat. Add minced garlic, chopped shallot, and sliced chilies, and sauté until fragrant, about 2-3 minutes.
- Add the minced lemongrass and torn kaffir lime leaves to the pot, cooking for another minute.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Add sliced mushrooms and shrimp to the pot, cooking for about 5-7 minutes until the shrimp are pink and cooked through.
- Stir in the fish sauce and lime juice, then season with salt and black pepper to taste.
- Finally, add the zoodles to the pot and cook for an additional 2-3 minutes until just tender.
- Remove from heat, stir in chopped cilantro, and serve hot.
