Ingredients
- Zucchini - 2 medium, spiralized into noodles
- Chicken breast - 200 grams, thinly sliced
- Coconut milk - 200 ml
- Chicken broth - 500 ml
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Tom Yum paste - 2 tablespoons
- Mushrooms - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Kaffir lime leaves - 4 leaves
- Lemongrass - 1 stalk, bruised
- Fresh cilantro - 1/4 cup, chopped
- Thai chili - 1, sliced (optional)
- Salt - to taste
Steps
- In a pot, combine chicken broth, coconut milk, Tom Yum paste, kaffir lime leaves, and bruised lemongrass over medium heat. Bring to a simmer.
- Add the sliced chicken breast and cook for about 5-7 minutes until the chicken is cooked through.
- Stir in the sliced mushrooms and cherry tomatoes, and let simmer for another 3-4 minutes.
- Add the spiralized zucchini noodles and cook for 2-3 minutes until just tender.
- Stir in the lime juice, fish sauce, and sliced Thai chili (if using). Season with salt to taste.
- Remove from heat and stir in the chopped cilantro.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
