Ingredients

  • Zucchini - 2 medium, spiralized into noodles
  • Chicken breast - 200 grams, thinly sliced
  • Coconut milk - 200 ml
  • Chicken broth - 500 ml
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Tom Yum paste - 2 tablespoons
  • Mushrooms - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Kaffir lime leaves - 4 leaves
  • Lemongrass - 1 stalk, bruised
  • Fresh cilantro - 1/4 cup, chopped
  • Thai chili - 1, sliced (optional)
  • Salt - to taste

Steps

  1. In a pot, combine chicken broth, coconut milk, Tom Yum paste, kaffir lime leaves, and bruised lemongrass over medium heat. Bring to a simmer.
  2. Add the sliced chicken breast and cook for about 5-7 minutes until the chicken is cooked through.
  3. Stir in the sliced mushrooms and cherry tomatoes, and let simmer for another 3-4 minutes.
  4. Add the spiralized zucchini noodles and cook for 2-3 minutes until just tender.
  5. Stir in the lime juice, fish sauce, and sliced Thai chili (if using). Season with salt to taste.
  6. Remove from heat and stir in the chopped cilantro.
  7. Serve hot, garnished with additional cilantro and lime wedges if desired.
