Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Coconut milk - 400 ml
  • Chicken or vegetable broth - 200 ml
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Fresh lemongrass - 1 stalk, chopped
  • Kaffir lime leaves - 3 leaves, torn
  • Galangal - 1 tablespoon, sliced (or ginger if unavailable)
  • Thai red chili - 1, sliced (adjust to taste)
  • Mushrooms - 100 grams, sliced
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, combine the chicken or vegetable broth, lemongrass, kaffir lime leaves, and galangal. Bring to a boil and then simmer for 10 minutes to infuse the flavors.
  2. Add the coconut milk, fish sauce, and lime juice to the pot. Stir well and bring back to a gentle simmer.
  3. Add the shrimp and sliced mushrooms to the pot. Cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
  4. Adjust seasoning with salt, black pepper, and additional lime juice if desired.
  5. Remove from heat and stir in the chopped cilantro and sliced Thai chili.
  6. Serve hot, garnished with extra cilantro and lime wedges if desired.
