- Chicken or vegetable broth - 200 ml
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Fresh lemongrass - 1 stalk, chopped
- Kaffir lime leaves - 3 leaves, torn
- Galangal - 1 tablespoon, sliced (or ginger if unavailable)
- Thai red chili - 1, sliced (adjust to taste)
- Mushrooms - 100 grams, sliced
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, combine the chicken or vegetable broth, lemongrass, kaffir lime leaves, and galangal. Bring to a boil and then simmer for 10 minutes to infuse the flavors.
- Add the coconut milk, fish sauce, and lime juice to the pot. Stir well and bring back to a gentle simmer.
- Add the shrimp and sliced mushrooms to the pot. Cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
- Adjust seasoning with salt, black pepper, and additional lime juice if desired.
- Remove from heat and stir in the chopped cilantro and sliced Thai chili.
