- Chicken breast - 250 grams, sliced thinly
- Coconut milk - 400 ml
- Chicken broth - 200 ml
- Lemongrass - 1 stalk, chopped
- Galangal - 1 inch, sliced
- Kaffir lime leaves - 3 leaves, torn
- Mushrooms - 100 grams, sliced
- Thai bird's eye chili - 1, sliced (adjust to taste)
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
Steps
- In a pot, combine the chicken broth, chopped lemongrass, sliced galangal, and torn kaffir lime leaves. Bring to a boil over medium heat.
- Add the sliced chicken breast to the pot and cook for about 5-7 minutes until the chicken is cooked through.
- Stir in the coconut milk and sliced mushrooms, then simmer for another 5 minutes.
- Add the sliced bird's eye chili and fish sauce. Adjust the seasoning with salt if necessary.
- Remove the pot from heat and stir in the lime juice.
- Serve hot, garnished with chopped cilantro.
