Ingredients

  • Chicken breast - 250 grams, sliced thinly
  • Coconut milk - 400 ml
  • Chicken broth - 200 ml
  • Lemongrass - 1 stalk, chopped
  • Galangal - 1 inch, sliced
  • Kaffir lime leaves - 3 leaves, torn
  • Mushrooms - 100 grams, sliced
  • Thai bird's eye chili - 1, sliced (adjust to taste)
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste

Steps

  1. In a pot, combine the chicken broth, chopped lemongrass, sliced galangal, and torn kaffir lime leaves. Bring to a boil over medium heat.
  2. Add the sliced chicken breast to the pot and cook for about 5-7 minutes until the chicken is cooked through.
  3. Stir in the coconut milk and sliced mushrooms, then simmer for another 5 minutes.
  4. Add the sliced bird's eye chili and fish sauce. Adjust the seasoning with salt if necessary.
  5. Remove the pot from heat and stir in the lime juice.
  6. Serve hot, garnished with chopped cilantro.
