Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 150 grams, shredded
  • Almond flour - 50 grams
  • Egg - 1 large
  • Cream cheese - 30 grams, softened
  • Red bell pepper - 50 grams, sliced
  • Zucchini - 100 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Peanut butter (sugar-free) - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Grate the cauliflower using a food processor or box grater until it resembles rice. Steam the cauliflower for about 5 minutes until tender, then let it cool.
  3. Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
  4. In a bowl, combine the cauliflower, shredded mozzarella, almond flour, egg, and softened cream cheese. Mix until well combined.
  5. Spread the mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
  7. While the crust is baking, prepare the peanut sauce by mixing the peanut butter, coconut aminos, lime juice, garlic powder, ginger powder, and chili flakes in a small bowl until smooth.
  8. Remove the crust from the oven and spread the peanut sauce evenly over the top.
  9. Arrange the sliced red bell pepper, zucchini, and julienned carrot on top of the sauce.
  10. Return the pizza to the oven and bake for an additional 10-12 minutes until the vegetables are tender.
  11. Once done, remove from the oven and garnish with chopped green onion and cilantro before serving.
