- Squid - 100 grams, cleaned and sliced

- Thai red curry paste - 2 tablespoons

- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cilantro - 2 tablespoons, chopped
- Red bell pepper - 1, thinly sliced
- Green onions - 2, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add the shrimp and squid to the skillet, cooking for 3-4 minutes until the seafood is opaque and cooked through. Season with salt and black pepper.
- Stir in the Thai red curry paste and cook for another minute, allowing the flavors to meld.
- Pour in the coconut milk, fish sauce, and lime juice, then bring the mixture to a gentle simmer. Add the sliced red bell pepper and cook for an additional 2-3 minutes until slightly softened.
- Add the spiralized zucchini to the skillet and toss everything together, cooking for 2-3 minutes until the zoodles are just tender.
