Ingredients

  • Zucchini - 2 medium
  • Peanut butter (natural, unsweetened) - 4 tbsp
  • Coconut milk - 100 ml
  • Soy sauce (or tamari for gluten-free) - 2 tbsp
  • Rice vinegar - 1 tbsp
  • Lime juice - 1 tbsp
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 tsp
  • Chili flakes - 1/2 tsp (adjust to taste)
  • Cilantro (chopped) - 2 tbsp
  • Chopped peanuts (for garnish) - 2 tbsp
  • Sesame oil - 1 tsp
  • Salt - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles). Set aside.
  2. In a medium bowl, combine the peanut butter, coconut milk, soy sauce, rice vinegar, lime juice, minced garlic, grated ginger, and chili flakes. Whisk until smooth and well combined.
  3. In a large skillet, heat sesame oil over medium heat. Add the zucchini noodles and sauté for 3-4 minutes until slightly tender.
  4. Pour the peanut sauce over the zoodles and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
  5. Remove from heat and stir in chopped cilantro. Adjust salt to taste.
