- Zucchini - 2 medium
- Peanut butter (natural, unsweetened) - 4 tbsp
- Coconut milk - 100 ml
- Soy sauce (or tamari for gluten-free) - 2 tbsp
- Rice vinegar - 1 tbsp
- Lime juice - 1 tbsp
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 tsp
- Chili flakes - 1/2 tsp (adjust to taste)
- Cilantro (chopped) - 2 tbsp
- Chopped peanuts (for garnish) - 2 tbsp
- Sesame oil - 1 tsp
- Salt - to taste
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles). Set aside.
- In a medium bowl, combine the peanut butter, coconut milk, soy sauce, rice vinegar, lime juice, minced garlic, grated ginger, and chili flakes. Whisk until smooth and well combined.
- In a large skillet, heat sesame oil over medium heat. Add the zucchini noodles and sauté for 3-4 minutes until slightly tender.
- Pour the peanut sauce over the zoodles and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in chopped cilantro. Adjust salt to taste.
- Serve immediately, garnished with chopped peanuts and additional cilantro if desired.
