Ingredients
- Ground pork - 250 grams
- Coconut flour - 30 grams
- Egg - 1 large
- Garlic, minced - 2 cloves
- Fresh ginger, grated - 1 teaspoon
- Thai red curry paste - 1 tablespoon
- Fish sauce - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Green onions, chopped - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons
- Coconut milk - 100 ml
- Lime juice - 1 tablespoon
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- In a large bowl, combine ground pork, coconut flour, egg, minced garlic, grated ginger, Thai red curry paste, fish sauce, chopped cilantro, chopped green onions, salt, and black pepper. Mix until well combined.
- Preheat a skillet over medium heat and add 1 tablespoon of coconut oil.
- Form the meat mixture into small meatballs, about 2.5 cm in diameter, and place them in the skillet. Cook for about 5-7 minutes, turning occasionally, until browned and cooked through.
- In a separate small saucepan, add the remaining tablespoon of coconut oil and heat it over medium heat. Stir in coconut milk, lime juice, and red chili flakes. Cook for 2-3 minutes until heated through.
- Serve the meatballs warm with the coconut dipping sauce on the side.
