Ingredients

  • Chicken breast - 300 grams
  • Coconut aminos - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Thai basil - 2 tablespoons, chopped
  • Red chili flakes - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Cucumber - 100 grams, sliced
  • Radishes - 50 grams, thinly sliced
  • Lettuce - 2 cups, chopped

Steps

  1. In a bowl, mix coconut aminos, fish sauce, lime juice, minced garlic, grated ginger, cilantro, Thai basil, and red chili flakes to create the marinade.
  2. Add the chicken breast to the marinade, ensuring it is well-coated. Cover and let it marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill to medium-high heat and brush with olive oil.
  4. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes per side, or until the internal temperature reaches 75°C.
  5. While the chicken is grilling, prepare the salad by combining sliced cucumber, radishes, and chopped lettuce in a bowl.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Serve the sliced grilled chicken over the salad and drizzle with any remaining marinade if desired.
