Ingredients

  • Cauliflower rice - 300 grams
  • Eggs - 2 large
  • Cooked chicken breast, diced - 150 grams
  • Red bell pepper, diced - 50 grams
  • Green onion, chopped - 30 grams
  • Garlic, minced - 2 cloves
  • Soy sauce (low sodium) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Coconut oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of coconut oil in a large skillet or wok over medium heat.
  2. Add minced garlic and diced red bell pepper to the skillet, sauté for 2-3 minutes until fragrant.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
  4. Add the diced cooked chicken breast and cauliflower rice to the skillet, mixing everything together.
  5. Pour in the soy sauce, fish sauce, and lime juice, stirring well to combine. Cook for an additional 5-7 minutes until the cauliflower rice is tender.
  6. Stir in the chopped green onion and cilantro, seasoning with salt and black pepper to taste.
  7. Remove from heat and serve warm, garnished with additional cilantro if desired.
