Ingredients
- Cauliflower rice - 300 grams
- Eggs - 2 large
- Cooked chicken breast, diced - 150 grams
- Red bell pepper, diced - 50 grams
- Green onion, chopped - 30 grams
- Garlic, minced - 2 cloves
- Soy sauce (low sodium) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Coconut oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of coconut oil in a large skillet or wok over medium heat.
- Add minced garlic and diced red bell pepper to the skillet, sauté for 2-3 minutes until fragrant.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
- Add the diced cooked chicken breast and cauliflower rice to the skillet, mixing everything together.
