- Coconut cream - 200 ml
- Eggs - 2 large
- Erythritol - 2 tablespoons
- Pandan extract - 1 teaspoon
- Salt - a pinch
- Water - 100 ml
Steps
- Preheat the steamer or a pot of water with a steaming rack to medium heat.
- In a mixing bowl, whisk together the coconut cream, eggs, erythritol, pandan extract, and salt until well combined and smooth.
- Pour the mixture into two small heatproof ramekins or cups, filling them about 3/4 full.
- Place the ramekins in the steamer and cover with a lid. Steam for about 20-25 minutes, or until the custard is set (a toothpick inserted should come out clean).
- Remove the ramekins from the steamer and let them cool slightly before serving. Optionally, chill in the refrigerator for a firmer texture.
