Ingredients

  • Coconut cream - 200 ml
  • Eggs - 2 large
  • Erythritol - 2 tablespoons
  • Pandan extract - 1 teaspoon
  • Salt - a pinch
  • Water - 100 ml

Steps

  1. Preheat the steamer or a pot of water with a steaming rack to medium heat.
  2. In a mixing bowl, whisk together the coconut cream, eggs, erythritol, pandan extract, and salt until well combined and smooth.
  3. Pour the mixture into two small heatproof ramekins or cups, filling them about 3/4 full.
  4. Place the ramekins in the steamer and cover with a lid. Steam for about 20-25 minutes, or until the custard is set (a toothpick inserted should come out clean).
  5. Remove the ramekins from the steamer and let them cool slightly before serving. Optionally, chill in the refrigerator for a firmer texture.
