Ingredients

  • Cucumber - 1 large (about 300g)
  • Red bell pepper - 1/2 medium (about 50g)
  • Red onion - 1/4 medium (about 30g)
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Erythritol or other keto-friendly sweetener - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Wash the cucumber and slice it in half lengthwise, then scoop out the seeds with a spoon. Slice the cucumber into thin half-moons.
  2. Dice the red bell pepper and finely chop the red onion.
  3. In a large mixing bowl, combine the cucumber slices, diced red bell pepper, and chopped red onion.
