Ingredients

  • Coconut milk - 400 ml
  • Erythritol - 4 tablespoons
  • Lime juice - 2 tablespoons
  • Lime zest - 1 teaspoon
  • Fresh basil leaves - 5 leaves
  • Salt - a pinch

Steps

  1. In a medium mixing bowl, combine the coconut milk, erythritol, lime juice, lime zest, and a pinch of salt. Whisk until the erythritol is fully dissolved.
  2. Finely chop the fresh basil leaves and fold them into the coconut mixture.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, typically about 10-15 minutes.
  4. If you do not have an ice cream maker, pour the mixture into a shallow dish and freeze for about 30 minutes. Stir vigorously with a fork, then return to the freezer and repeat every 30 minutes until the sorbet is fully frozen and fluffy.
  5. Once ready, scoop the sorbet into bowls and garnish with additional basil leaves or lime zest if desired.
