- Cauliflower rice - 300 grams
- Shredded mozzarella cheese - 150 grams
- Almond flour - 50 grams
- Egg - 1 large
- Cooked chicken breast - 200 grams, shredded
- Thai red curry paste - 2 tablespoons
- Coconut cream - 100 ml
- Red bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Fresh cilantro - 20 grams, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, combine cauliflower rice, mozzarella cheese, almond flour, egg, salt, and pepper to form the pizza crust. Mix well.
- Spread the mixture onto a parchment-lined baking sheet in a circular shape, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, heat a skillet over medium heat and add the shredded chicken, red curry paste, and coconut cream. Stir until the chicken is coated and heated through.
- Once the crust is done, remove it from the oven and spread the chicken mixture evenly over the crust.
- Top with sliced red bell pepper, green onions, and a squeeze of lime juice.
- Return the pizza to the oven for an additional 5-7 minutes.
- Remove from the oven and garnish with fresh cilantro before slicing and serving.
