- Unsweetened shredded coconut - 30g
- Almond flour - 30g
- Coconut oil - 2 tablespoons (30ml)
- Erythritol sweetener - 2 tablespoons (30g)
- Vanilla extract - 1 teaspoon (5ml)
- Salt - a pinch
- Water - as needed (around 1-2 tablespoons)
Steps
- In a dry skillet over medium heat, lightly toast the black sesame seeds for about 3-4 minutes until fragrant. Set aside to cool.
- In a mixing bowl, combine the toasted black sesame seeds, unsweetened shredded coconut, almond flour, erythritol sweetener, and a pinch of salt.
- Melt the coconut oil and add it to the dry ingredients along with the vanilla extract. Mix well until the mixture is crumbly.
- Gradually add water, one tablespoon at a time, until the mixture holds together but is not too sticky.
- Once the dough is formed, shape it into small balls, about 2.5cm in diameter.
