Ingredients

  • Almond flour - 200 grams
  • Shredded mozzarella cheese - 150 grams
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cooked chicken breast, shredded - 150 grams
  • Thai red curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Low-carb BBQ sauce - 4 tablespoons
  • Bell pepper, thinly sliced - 1 medium
  • Red onion, thinly sliced - 1/2 medium
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt to form a dough.
  3. Spread the dough onto the prepared baking sheet, shaping it into a pizza crust about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. In a separate bowl, mix shredded chicken with Thai red curry paste and coconut milk until well combined.
  6. Remove the crust from the oven and spread low-carb BBQ sauce evenly over it.
  7. Top the pizza with the chicken mixture, sliced bell pepper, and red onion.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender and the cheese is bubbly.
  9. Once done, remove the pizza from the oven, sprinkle with fresh cilantro, and let it cool for a few minutes.
  10. Slice the pizza, serve with lime wedges, and enjoy!
