- Shredded mozzarella cheese - 150 grams
- Cream cheese - 100 grams
- Egg - 1 large
- Baking powder - 1 teaspoon

- Cooked chicken breast, shredded - 150 grams
- Thai red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Low-carb BBQ sauce - 4 tablespoons
- Bell pepper, thinly sliced - 1 medium
- Red onion, thinly sliced - 1/2 medium
- Fresh cilantro, chopped - 2 tablespoons
- Lime wedges - for serving
Steps
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt to form a dough.
- Spread the dough onto the prepared baking sheet, shaping it into a pizza crust about 1/2 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- In a separate bowl, mix shredded chicken with Thai red curry paste and coconut milk until well combined.
- Remove the crust from the oven and spread low-carb BBQ sauce evenly over it.
- Top the pizza with the chicken mixture, sliced bell pepper, and red onion.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender and the cheese is bubbly.
- Once done, remove the pizza from the oven, sprinkle with fresh cilantro, and let it cool for a few minutes.
