- Almond flour - 120 grams
- Mozzarella cheese - 150 grams
- Cream cheese - 30 grams
- Egg - 1 large
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Cooked chicken breast - 100 grams, shredded
- Thai red curry paste - 1 tablespoon
- Coconut milk - 50 ml
- Fresh basil leaves - 20 grams, chopped
- Red bell pepper - 50 grams, sliced
- Shredded mozzarella cheese - 50 grams (for topping)
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, 150g mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a circular pizza shape, about 1/2 cm thick.
- Transfer the rolled-out dough onto a baking sheet and bake for 10-12 minutes, or until lightly golden.
- In a separate bowl, mix the shredded chicken with Thai red curry paste and coconut milk until well combined.
- Remove the pizza crust from the oven and spread the chicken mixture evenly over the crust.
- Top with sliced red bell pepper, chopped basil, and shredded mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly browned.
- Remove from the oven, sprinkle with chili flakes if desired, and let it cool for 5 minutes before slicing.
- Serve warm, garnished with additional fresh basil if desired.
