Ingredients

  • Almond flour - 120 grams
  • Mozzarella cheese - 150 grams
  • Cream cheese - 30 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cooked chicken breast - 100 grams, shredded
  • Thai red curry paste - 1 tablespoon
  • Coconut milk - 50 ml
  • Fresh basil leaves - 20 grams, chopped
  • Red bell pepper - 50 grams, sliced
  • Shredded mozzarella cheese - 50 grams (for topping)
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, 150g mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out into a circular pizza shape, about 1/2 cm thick.
  4. Transfer the rolled-out dough onto a baking sheet and bake for 10-12 minutes, or until lightly golden.
  5. In a separate bowl, mix the shredded chicken with Thai red curry paste and coconut milk until well combined.
  6. Remove the pizza crust from the oven and spread the chicken mixture evenly over the crust.
  7. Top with sliced red bell pepper, chopped basil, and shredded mozzarella cheese.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly browned.
  9. Remove from the oven, sprinkle with chili flakes if desired, and let it cool for 5 minutes before slicing.
  10. Serve warm, garnished with additional fresh basil if desired.
