  • Erythritol - 2 tablespoons
  • Almond extract - 1 teaspoon
  • Salt - a pinch
  • Chopped almonds - 2 tablespoons (for garnish)
  • Fresh mint leaves - a few (for garnish)

Steps

  1. In a small saucepan, combine almond milk, coconut milk, and erythritol. Heat over medium heat until the erythritol is fully dissolved.
  2. Sprinkle agar-agar powder over the mixture, whisking constantly to avoid lumps. Continue to heat until it reaches a gentle simmer.
  3. Once simmering, reduce the heat and let it cook for an additional 2-3 minutes, stirring consistently until the agar-agar is completely dissolved.
  4. Remove from heat and stir in the almond extract and a pinch of salt.
