Ingredients
- Taro root - 100 grams
- Coconut milk - 150 ml
- Erythritol - 2 tablespoons
- Unsweetened shredded coconut - 2 tablespoons
- Vanilla extract - 1 teaspoon

- Water - 200 ml
Steps
- Peel and chop the taro root into small cubes.
- In a pot, bring 200 ml of water to a boil, then add the taro cubes and cook until tender, about 15 minutes.
- Drain the taro and mash it in a bowl until smooth.
- In a separate saucepan, combine the coconut milk, erythritol, vanilla extract, and a pinch of salt. Heat over low-medium heat until the erythritol is dissolved, stirring occasionally.
- Mix the mashed taro into the coconut milk mixture until well combined.
- Remove from heat and let it cool slightly before transferring it to serving dishes.
- Chill in the refrigerator for at least 10 minutes to set.
