Ingredients

  • Taro root - 100 grams
  • Coconut milk - 150 ml
  • Erythritol - 2 tablespoons
  • Unsweetened shredded coconut - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Water - 200 ml

Steps

  1. Peel and chop the taro root into small cubes.
  2. In a pot, bring 200 ml of water to a boil, then add the taro cubes and cook until tender, about 15 minutes.
  3. Drain the taro and mash it in a bowl until smooth.
  4. In a separate saucepan, combine the coconut milk, erythritol, vanilla extract, and a pinch of salt. Heat over low-medium heat until the erythritol is dissolved, stirring occasionally.
  5. Mix the mashed taro into the coconut milk mixture until well combined.
  6. Remove from heat and let it cool slightly before transferring it to serving dishes.
  7. Chill in the refrigerator for at least 10 minutes to set.
