Ingredients

  • Konjac rice - 150 grams
  • Coconut milk - 200 ml
  • Erythritol sweetener - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)
  • Shredded unsweetened coconut - 2 tablespoons (for garnish)

Steps

  1. Rinse the konjac rice under cold water and drain well.
  2. In a saucepan, combine the coconut milk, erythritol sweetener, vanilla extract, and salt. Heat over medium heat until the mixture is warm but not boiling.
  3. Add the rinsed konjac rice to the coconut milk mixture and stir well.
  4. Reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, stirring occasionally, until the konjac rice absorbs the coconut milk and becomes sticky.
  5. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
