Ingredients

  • Firm tofu - 200 grams
  • Coconut oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sriracha sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture. Cut it into cubes.
  2. In a large skillet, heat coconut oil over medium-high heat. Add the tofu cubes and sauté until golden brown on all sides, about 10-12 minutes.
  3. While the tofu is cooking, prepare the salad dressing by mixing lime juice, fish sauce, Sriracha sauce, sesame oil, salt, and black pepper in a small bowl.
  4. In a large bowl, combine the diced red bell pepper, cucumber, green onions, and fresh cilantro.
  5. Once the tofu is cooked, let it cool slightly before adding it to the vegetable mixture.
