Ingredients
- Almond flour - 1 cup
- Mozzarella cheese - 1 cup, shredded
- Cream cheese - 50 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Cooked shrimp - 150 grams, peeled and deveined
- Thai red curry paste - 1 tablespoon
- Coconut milk - 2 tablespoons
- Bell pepper - 1/2 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Red chili flakes - 1 teaspoon (adjust to taste)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the almond flour, shredded mozzarella, cream cheese, egg, garlic powder, baking powder, and salt. Mix until a dough forms.
- Place the dough onto a parchment-lined baking sheet and shape it into a pizza crust, about 1cm thick.
- Bake the crust in the preheated oven for 10-12 minutes or until lightly golden.
- While the crust is baking, in a small bowl, mix the cooked shrimp with Thai red curry paste and coconut milk. Stir until the shrimp are well coated.
- Once the crust is done, remove it from the oven and evenly distribute the shrimp mixture over the crust.
- Top with sliced bell pepper and sprinkle with red chili flakes.
- Return the pizza to the oven and bake for an additional 8-10 minutes, until the shrimp are heated through.
- Remove from the oven, drizzle with lime juice, and garnish with fresh cilantro before serving.
