- Almond flour - 1 cup
- Mozzarella cheese (shredded) - 1 cup
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Fresh green papaya (shredded) - 1 cup
- Cherry tomatoes (halved) - 1/2 cup
- Carrots (shredded) - 1/4 cup
- Fresh cilantro (chopped) - 2 tablespoons
- Thai chili (finely chopped) - 1 (adjust to taste)
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Crushed peanuts (for topping) - 2 tablespoons
Steps
- Preheat your oven to 220°C (425°F).
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, egg, olive oil, and salt. Mix until a dough forms.
- Press the dough onto a parchment-lined baking sheet to form a pizza crust, about 1/2 inch thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- While the crust is baking, prepare the Som Tum topping by combining shredded papaya, cherry tomatoes, carrots, cilantro, Thai chili, lime juice, and fish sauce in a bowl. Mix well.
- Once the crust is done, remove it from the oven and evenly distribute the Som Tum mixture over the crust.
- Sprinkle crushed peanuts on top for added crunch.
- Return the pizza to the oven and bake for an additional 5-7 minutes.
- Remove from the oven, let it cool for a few minutes, slice, and serve.
