Ingredients
- Ground chicken - 250 grams
- Green papaya - 150 grams, grated
- Carrot - 50 grams, grated
- Cherry tomatoes - 100 grams, halved
- Fresh cilantro - 15 grams, chopped
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Chili flakes - 1 teaspoon
- Garlic - 1 clove, minced
- Almond flour - 30 grams
- Egg - 1 large
- Coconut oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Lettuce leaves - 4 large
Steps
- In a large mixing bowl, combine the ground chicken, almond flour, egg, minced garlic, salt, and pepper. Mix until well combined.
- Form the mixture into 2 patties and set aside.
- In another bowl, combine the grated papaya, grated carrot, halved cherry tomatoes, chopped cilantro, lime juice, fish sauce, and chili flakes. Toss well to make the Som Tum salad.
- Heat coconut oil in a non-stick skillet over medium heat. Cook the chicken patties for about 5-7 minutes on each side, or until fully cooked and golden brown.
- To assemble the burgers, place a lettuce leaf on a plate, add a chicken patty on top, and generously pile the Som Tum salad over the patty. Top with another lettuce leaf if desired.
