- Mozzarella cheese (shredded) - 100g
- Red curry paste - 2 tablespoons
- Coconut milk - 100ml
- Cooked chicken breast (shredded) - 150g
- Bell pepper (sliced) - 1 medium
- Red onion (sliced) - 1 small
- Fresh cilantro - for garnish
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine almond flour, cream cheese, egg, and half of the mozzarella cheese. Mix until a dough forms.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- In a skillet, heat olive oil over medium heat. Add red curry paste and cook for 1-2 minutes until fragrant.
- Stir in coconut milk and bring to a simmer. Add shredded chicken, bell pepper, and red onion, cooking for another 5 minutes until vegetables are tender.
- Remove the crust from the oven and spread the curry mixture evenly over the top.
- Sprinkle the remaining mozzarella cheese on top of the curry mixture.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
