Ingredients

  • Almond flour - 100g
  • Cream cheese - 60g
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100g
  • Red curry paste - 2 tablespoons
  • Coconut milk - 100ml
  • Cooked chicken breast (shredded) - 150g
  • Bell pepper (sliced) - 1 medium
  • Red onion (sliced) - 1 small
  • Fresh cilantro - for garnish
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, cream cheese, egg, and half of the mozzarella cheese. Mix until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. In a skillet, heat olive oil over medium heat. Add red curry paste and cook for 1-2 minutes until fragrant.
  6. Stir in coconut milk and bring to a simmer. Add shredded chicken, bell pepper, and red onion, cooking for another 5 minutes until vegetables are tender.
  7. Remove the crust from the oven and spread the curry mixture evenly over the top.
  8. Sprinkle the remaining mozzarella cheese on top of the curry mixture.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
