Ingredients

  • Coconut milk - 400 ml
  • Chicken breast - 300 grams, sliced
  • Bell pepper (red) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - a handful
  • Salt - to taste

Steps

  1. In a large skillet, heat the coconut oil over medium heat.
  2. Add the red curry paste and sauté for about 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir until the curry paste is fully dissolved.
  4. Add the sliced chicken breast and cook for about 5-7 minutes, or until the chicken is cooked through.
