Ingredients

  • White fish fillets (such as tilapia or cod) - 300 grams
  • Coconut oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Red chili, chopped - 1
  • Tamarind paste - 1 tablespoon
  • Coconut milk - 100 ml
  • Fish sauce - 1 tablespoon
  • Erythritol (or sweetener of choice) - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small saucepan, heat the coconut oil over medium heat and sauté the minced garlic and chopped red chili until fragrant.
  3. Add the tamarind paste, coconut milk, fish sauce, erythritol, and lime juice to the saucepan and stir well. Simmer for about 5 minutes until the sauce thickens slightly.
  4. Season the fish fillets with salt and black pepper, then place them in a baking dish.
  5. Pour the sauce over the fish fillets, ensuring they are well-coated.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Remove from the oven and garnish with chopped cilantro before serving.
