- Fish sauce - 1 tablespoon
- Erythritol (or sweetener of choice) - 1 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Salt - to taste

Steps
- Preheat the oven to 200°C (400°F).
- In a small saucepan, heat the coconut oil over medium heat and sauté the minced garlic and chopped red chili until fragrant.
- Add the tamarind paste, coconut milk, fish sauce, erythritol, and lime juice to the saucepan and stir well. Simmer for about 5 minutes until the sauce thickens slightly.
- Season the fish fillets with salt and black pepper, then place them in a baking dish.
- Pour the sauce over the fish fillets, ensuring they are well-coated.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
