Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Panang curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Cooked chicken breast (shredded) - 150 grams
  • Bell pepper (sliced) - 1/2 medium
  • Red onion (sliced) - 1/4 medium
  • Fresh cilantro - 2 tablespoons (chopped)
  • Lime - 1 (for juice and wedges)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, and a pinch of salt. Mix until a dough forms.
  3. Place the dough on a parchment-lined baking sheet, spreading it out evenly to form a pizza crust about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. In a small saucepan, combine Panang curry paste and coconut milk over medium heat. Stir until smooth and heated through.
  6. Remove the crust from the oven and spread the Panang curry sauce evenly over the surface.
  7. Top the pizza with shredded chicken, sliced bell pepper, and red onion.
  8. Return the pizza to the oven and bake for an additional 8-10 minutes until the toppings are heated and slightly charred.
  9. Once cooked, remove from the oven and garnish with fresh cilantro and a squeeze of lime juice. Serve with lime wedges on the side.
