Ingredients

  • Chicken breast - 300 grams, diced
  • Panang curry paste - 2 tablespoons
  • Coconut milk - 400 milliliters
  • Fish sauce - 1 tablespoon
  • Stevia or erythritol - 1 teaspoon (optional)
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Fresh basil leaves - 10 leaves
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the diced chicken breast and cook until browned, about 5-7 minutes.
  3. Stir in the Panang curry paste and cook for an additional 2 minutes until fragrant.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the fish sauce, stevia or erythritol (if using), sliced bell pepper, and zucchini.
  6. Simmer for 10-15 minutes until the vegetables are tender and the chicken is cooked through.
