- Cream cheese - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Cooked chicken breast (shredded) - 150 grams
- Red bell pepper (sliced) - 1/2 medium
- Green onions (chopped) - 2 stalks
- Egg (for topping) - 1 large
- Peanut butter (natural, unsweetened) - 2 tablespoons
- Soy sauce (or coconut aminos) - 2 tablespoons
- Lime juice - 1 tablespoon
- Garlic (minced) - 1 clove
- Crushed peanuts (for garnish) - 2 tablespoons
- Cilantro (chopped, for garnish) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, and salt. Mix until a dough forms.
- Place the dough on a parchment-lined baking sheet and shape it into a pizza crust, about 1/2 inch thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- In another bowl, mix together peanut butter, soy sauce, lime juice, and minced garlic to create the sauce.
- Remove the crust from the oven and spread the sauce evenly over the top.
- Top with shredded chicken, sliced red bell pepper, and chopped green onions.
- Make a small well in the center of the pizza and crack an egg into it.
- Return the pizza to the oven and bake for an additional 10-12 minutes or until the egg is cooked to your liking.
- Once done, remove from the oven, garnish with crushed peanuts and cilantro, then slice and serve.
