Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Cooked chicken breast (shredded) - 150 grams
  • Red bell pepper (sliced) - 1/2 medium
  • Green onions (chopped) - 2 stalks
  • Egg (for topping) - 1 large
  • Peanut butter (natural, unsweetened) - 2 tablespoons
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Crushed peanuts (for garnish) - 2 tablespoons
  • Cilantro (chopped, for garnish) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, and salt. Mix until a dough forms.
  3. Place the dough on a parchment-lined baking sheet and shape it into a pizza crust, about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. In another bowl, mix together peanut butter, soy sauce, lime juice, and minced garlic to create the sauce.
  6. Remove the crust from the oven and spread the sauce evenly over the top.
  7. Top with shredded chicken, sliced red bell pepper, and chopped green onions.
  8. Make a small well in the center of the pizza and crack an egg into it.
  9. Return the pizza to the oven and bake for an additional 10-12 minutes or until the egg is cooked to your liking.
  10. Once done, remove from the oven, garnish with crushed peanuts and cilantro, then slice and serve.
