Ingredients
- Zucchini - 2 medium (about 300g)
- Eggs - 4 large
- Chicken breast - 200g, thinly sliced
- Peanut butter - 2 tablespoons (30g)
- Soy sauce (or tamari for gluten-free) - 3 tablespoons (45ml)
- Fish sauce - 1 tablespoon (15ml)
- Lime juice - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Chili flakes - 1 teaspoon (optional)
- Cilantro - for garnish
- Salt - to taste
- Pepper - to taste
- Olive oil - 1 tablespoon (15ml)
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
- In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
- Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them with the chicken.
- In a bowl, combine peanut butter, soy sauce, fish sauce, and lime juice to make the sauce. Pour the sauce over the chicken and eggs mixture, stirring to combine.
- Add the zucchini noodles to the skillet and toss everything together for about 2-3 minutes, until the noodles are heated through but still slightly crunchy.
- Stir in chopped green onions and chili flakes, if using. Remove from heat.
- Serve immediately, garnished with fresh cilantro.
