Ingredients

  • Zucchini - 2 medium (about 300g)
  • Eggs - 4 large
  • Chicken breast - 200g, thinly sliced
  • Peanut butter - 2 tablespoons (30g)
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons (45ml)
  • Fish sauce - 1 tablespoon (15ml)
  • Lime juice - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Chili flakes - 1 teaspoon (optional)
  • Cilantro - for garnish
  • Salt - to taste
  • Pepper - to taste
  • Olive oil - 1 tablespoon (15ml)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
  2. In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
  4. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them with the chicken.
  5. In a bowl, combine peanut butter, soy sauce, fish sauce, and lime juice to make the sauce. Pour the sauce over the chicken and eggs mixture, stirring to combine.
  6. Add the zucchini noodles to the skillet and toss everything together for about 2-3 minutes, until the noodles are heated through but still slightly crunchy.
  7. Stir in chopped green onions and chili flakes, if using. Remove from heat.
  8. Serve immediately, garnished with fresh cilantro.
