Ingredients
- Zucchini - 2 medium (about 400g)
- Soy sauce (or coconut aminos) - 4 tbsp
- Oyster sauce (or keto-friendly alternative) - 2 tbsp
- Eggs - 2 large
- Chicken breast - 200g, sliced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tbsp
- White pepper - 1/2 tsp
- Green onions - 2, chopped
- Cilantro - for garnish, optional
Steps
- Spiralize or julienne the zucchini to make low-carb noodles; set aside.
- In a bowl, mix the soy sauce, oyster sauce, and white pepper; set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sliced chicken breast, cooking until the chicken is no longer pink and cooked through, about 5-7 minutes.
- Push the chicken to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked.
- Add the zucchini noodles to the skillet along with the sauce mixture. Toss everything together and cook for an additional 3-4 minutes until the zucchini is slightly tender.
- Remove from heat, garnish with chopped green onions and cilantro if desired, and serve hot.
